Recipe: Easy Rotisserie Chicken (w/out the Rotisserie)

Your Frugal Buddy provides step by step directions for how she obtained a cheaper version of the Rotisserie Chicken that you find in the stores.

I just noticed these chickens last night at the store and they sell for around $5.99 each.  Definitely alot more than what her recipe calls for. 

Her recipe is pretty simple: Chicken + Marinade.   Chicken is always on the cheap side and I’m sure you have some free after coupon marinade, right?

  • Prepare Marinade as directed and preheat oven to 350 degrees.
  • Cut your chicken in half down the center. (Will cook faster & brown all sides of chicken; like a rotisserie.)
  • Place chicken in a large pan or glass baking dish. Pour marinade over chicken & loosely cover with foil.
  • Bake covered for 30 minutes then bake uncovered for an additional 20 minutes.

    Good idea about cutting it open.

    I have made rotisserie chicken by rubbing the chicken inside and out with spices, then open up a can of Dr. Pepper . Pour 1/4 of can out. Hold the chicken , butt side down, neck side up above the Dr. Pepper and place the chicken over the Dr. Pepper so the can is now inside the chicken(where you would stuff it). After doing this the chicken should be able to sit upright. Place it on the right side of the grill but only light the left side. Cook on indirect heat. If you get the grill to 350 degrees the chicken should be ready in about 1 - 1 1/2 hours depending on size. Let coool for 15 min after cooking and carefull remove the can.

    Presto! This is so tender. My family loves it. You can also subsitute beer for Dr. Pepper.
